Career and Philosophy
Carlos began his culinary career in his family’s kitchens, learning from generations of traditional cooks. His journey took him to some of the most prestigious kitchens in Mexico, where he perfected his art before venturing internationally. With over 20 years of experience, Carlos has worked in leading restaurants in Mexico, Spain, and finally in the United States, where Bailey is now his home.
His philosophy focuses on authenticity and innovation. Carlos is dedicated to preserving Mexican culinary traditions while exploring new methods and techniques to enrich and modernize the dining experience. He firmly believes in using fresh and sustainable ingredients, personally selecting products from local suppliers and direct imports from Mexico to ensure the authenticity and quality of each dish.
